Dark wheat/rye

I was looking back at this brew day post, and I noticed some thing missing. The recipe.

Still not sure what to call this. Or rather what percentage needs to be rye to call it a rye beer. But here…

3 gallon mini mash

1 can of wheat LME

1 lb pale 2 row

1/4 lb 20L

1/8 l. Choc malt

1 lb rye malt

1/2 oz Saaz 60

1/4 oz Saaz 15

1/4 oz Saaz 1

05 yeast

I bottled this batch about 2 weeks ago. Used 6 tablespoons of regular sugar. This appears to be just right for this style. Any of my normal British styles would too much.

So what I was trying to get from this beer was the spicier notes of the rye and Saaz and early tastings seems pretty close to what I want.

  1. I gotta say that the longer this sits the better it gets. Was pretty bland at first but is coming around. The tang of the wheat and spice of the rye and saaz is a pretty good combo. The slightest nod to the chocolate malt adds that little nudge of flavor. I like this more and more every time i open one
